SWEET POTATO MUFFIN
3 cups cooked & mashed sweet potatoes
(I bake fresh potatoes, peel and mash)
2 cups Cream of Wheat (uncooked)
1 cup oatmeal (uncooked)
1/2 cup apple sauce or apple juice
1 egg, washed, smash shell and use it too
2 Tbs baking powder
2 Tbs cinnamon (I sometimes use a little more)
1/2 cup raisins
2 Tbs sugar
1 Tbs vegetable oil
Adjust consistency as needed with applesauce, water or cream of wheat.
Use a cooking spray to coat cupcake papers. Spoon mixture into cupcake papers that have been placed in a muffin pan.
Sprinkle a little oatmeal on top, if desired.
Bake 20-35 minutes at 400 degrees.
You can substitute pumpkin for the sweet potatoes, but I have not tried it.
I add various things to this recipe, depending on what is available. I always add some chopped walnuts and thawed mixed vegetables.
Other things that I have added: fresh blueberries instead of the raisins; apples, banana and/or beans -- basically anything you think they will like.
